My businesses are very simple with almost no overhead. Using my own kitchen, I have been offering cooking classes for up to 5-7 individuals at a time to come into my home for about 3 hours and watch as I demonstrate a balanced meal being prepared using the recipes learned while at Ballymaloe.
My main focus is always on teaching basic cooking skills, we then sit down together and enjoy the completed meal. Because of current demand will be offering soon a 1 !/2 day bread making class that would include teaching the Tartine method for sourdough.
Lastly, just started writing a blog called Mastering, Master it! It is a diary of sorts about my continuing experience using Rory O'Connell's cookbook Master it! Think it is only going to make me a better instructor and Chef and maybe even a food writer!
